Crust-less Quiche

This quiche is pretty delicious and makes a great lunch to take to work! You can pretty much add any ingredients you like. Spinach and feta is a great combination! 

  • 6 bacon strips (or MORE)
  • 6 eggs
  • About a punnet of mushrooms, chopped (or less)
  • 1 onion finely chopped
  • 1 cup milk (or coconut milk for a dairy free option)
  • OPTIONAL: Half cup grated cheese (I used Cheddar)
  • Fry the bacon, onions & mushrooms. I fried the bacon first and then did the onions and mushrooms together. 
  • I cut the bacon into strips after they had cooled down. You can do it before you fry them but it's easier to cut/break after it's been cooked.
  • Pre-heat the oven to 180 degrees.
  • Lightly grease a baking dish (I use olive oil spray)
  • Add eggs and milk into the baking dish and beat together.
  • Mix in the bacon, onions and mushrooms.
  • Add seasoning such as ground pepper, salt, herbs or even some hot sauce. 
  • Sprinkle the cheese on top and put into the oven
  • Bake for about 30mins.

Quick, easy and delicious! I always put Worcestershire sauce on after, it just makes it extra yummy!
