7 Days, 7 Ingredient Salad Challenge

So on top of everything else I am also  a diabetic. There are 2 types of diabetes-
  1. Type 1 diabetes (insulin-dependent diabetes). Your body makes too little or no insulin. 
  1. Type 2 diabetes (non-insulin dependent diabetes). Your body can not use the insulin it makes.
I am a type 1 diabetic. My pancreas has slowly reduced the amount of insulin it produces which means that I need to inject insulin daily. Because I have Cystic Fibrosis and struggle to gain weight, dietitians recommend that I consume a normal diet (but a lot more than most people) and just inject with insulin EVERY meal. I eat small meals often which means that I was injecting myself up to 8 times a day! This lead to a lot of bruises and anxiety (I have a terrible phobia of needles believe it or not). I eventually got an insulin pump which I had to wear everyday and just program the amount of insulin I wanted it to inject. This worked great and I used it for a few years while waiting for my transplant. 

Now though, I have a normal life and I don't want to walk around with a pump and tubes hanging off of me! So I decided to give up sugar/carbs so that I only have to inject myself once a day.
